Dividing Coconut Milk for Coconut Cream

The easiest way to get coconut cream is to get a (13.5-ounce) can of full-fat organic coconut milk and put it in the refrigerator overnight. In the morning, flip the can upside down and open it. Pour out the coconut water, which contains most of the sugar, then scoop out the cream, which will be now solid. You can use this cream in any recipe that calls for coconut cream.

Cooking Prosciutto and Making Prosciutto Crumbles

To get prosciutto crumbles, preheat oven to 350°F. Place thin prosciutto slices on a cookie sheet and bake about 12 minutes. Remove from oven and let cool. Once cold and crispy, chop finely with a sharp kitchen knife until reduced to crumbles.

Cooking Bacon

There are two simple ways you can prepare your bacon for any of the recipes in this book:

Pan-Frying Method

Place the bacon slices closely together in a cold frying pan. Cook over medium heat without moving the slices about 5 minutes. The bacon should by then move easily and not be stuck to the bottom of the pan. Flip the bacon and cook about 5 more minutes. Remove from the pan and drain on a paper towel.

Oven Method

Preheat oven to 400°F. Place a rack inside a baking sheet. Lay the bacon slices on the rack and bake 10-15 minutes, depending on desired doneness level.
