Mediterranean Avocado and Quinoa Bowl

Ingredients:

·               1 cup of quinoa, cooked

·               2 cucumbers, peeled and diced

·               1 avocado, diced

·               1 tomato, finely chopped

·               1 red bell pepper, finely chopped

·               ½ cup of parsley, finely chopped

·               2 tablespoons of lemon juice

·               2 tablespoons of red onion, finely chopped

·               10 kalamata olives

·               1 tablespoon of garlic powder

·               Black pepper

·               Salt

Directions:

1.          Toss all the ingredients in a large bowl and toss them gently then serve it right away and enjoy.

Make it tastier:

To make it tastier, add in ¼ cup of crumbled feta cheese to the salad and enjoy.
