Hungry Hearty Chickpeas and Tomato Stew

Ingredients:

· 1 pound of parsnips, diced

· 1 pound of potato, diced

· 2 cups of chickpeas

· ¼ cup of coconut oil

· 2 yellow onion, diced

· 1 pound of carrots, diced

· 3 cups of veggies broth

· 2 pounds of butternut squash, diced

· 1 pound of sweet potato, diced

· ½ cup of raisins

· 1 cinnamon stick

· 1 tablespoon of apple cider vinegar

· 1 teaspoon of dry coriander

· 1 teaspoon of cumin

· Salt

Directions:

1. Combine all the veggies with oil in a crockpot and cook them for 6 min.

2. Stir in the rest of the ingredients and put on the lid then cook the stew for 6 h on low.

3. Once the veggies are fully cooked, serve your stew right away and enjoy.
