Clean Cooking: More Than 100 Gluten-Free, Dairy-Free, and Sugar-Free Recipes - Elisabeth Johansson (2016)

In this book, I write about the type of food I eat every day, food that makes me feel healthy and satisfied. Within these pages, you’ll find lots of vegetables, fruits, and berries, as well as a small amount of protein; there are no dairy products and almost no gluten. Clean cooking is quite simple: it’s a well-balanced diet that consists of tasty and clean food, which means it’s processed as little as possible and contains few, if any, additives. It’s easier to keep check on what you’re feeding your body if you prepare your meals from scratch using wholesome, unadulterated ingredients. With this book, I hope to inspire you to enjoy great-tasting food that will also make you feel happy and healthy.

It’s essential to listen to your body and understand what makes it feel good. In my case, while I am neither lactose- nor gluten-intolerant, I have found that I feel better and digest foods more easily whenever I abstain from dairy products and avoid gluten wherever possible. I’m happy to have found a diet that suits my lifestyle, and so I want to share my best recipes with you.

I first heard of the clean food trend a few years back, and it didn’t take me long to embrace its principles whole-heartedly: no additives or anything else weird—just wholesome dishes prepared with clean, organic, and biodynamic ingredients.

I love raw food and nutritious juices, so those meals are integral to my daily diet. However, I also love sweets, and I’m not going to deprive myself of dessert once in a while. Here, I indulge in healthier options that are packed with energy and nutrition; for example, I’ll use honey and dates instead of refined white sugar.

This is a collection of some of my best recipes for everyday meals, and I hope you will enjoy clean cooking and eating without gluten or dairy products, too. Eat well, and feel great!
