It seems only fair to conclude a book of slow cooked recipes with desserts. Yes, this may come to some as a surprise, but you can also slow cook your desserts. In fact, as you will see in this chapter, the range of desserts that you can slow cook is actually quite wide. Like for all other dishes, when desserts are cooked on high temperatures, many of the nutrients of the ingredients you put in your dishes are either damaged or totally destroyed, thus, for example, if you bake an apple pie at high temperatures, most of the vitamins in the apple will be burnt, and you will not be able to benefit from them. This is a real pity, because there is no reason why desserts should be unhealthy; in fact form many people, desserts are (or should be) a main part of their fruit consumption, but unfortunately, unless they slow cook their desserts, such fruit will not benefit them very much.

So, here are some great desserts that you can slow cook.

38. Slow cooked rice and peach pudding

This dessert is easy to prepare and it is both delicious and much healthier than the average dessert people have at the end of a meal, so, try it and you will not regret it.

Ingredients:

400 ml (2 cups) of skimmed milk

100 grammes (3 oz) of long grain rice

40 grammes (2 tablespoons) of brown sugar

A vanilla pod

A cinnamon stick

2 fresh peaches

A pinch of ground cinnamon

Serves 2

Preparation:

Cooking time: 7 hours

Put the milk, the rice, the vanilla pod, the cinnamon stick and the sugar in your crock pot, slow cooker or saucepan.

Put the lid on and cook on low heat for 7 hours.

10 minutes before serving, remove the cinnamon stick and the vanilla pod.

In the meantime, wash, stone and cut the peaches into slices.

Add the ground cinnamon to the pudding and stir it in 5 minutes before serving.

Place the rice pudding onto two bowls and garnish with the peach slices.

Ingredients:

90 grammes (3 oz) of amaretti biscuits

90 grammes (3 oz) of fresh raspberries

10 grammes (2 teaspoons) of butter

40 grammes (2 tablespoons) of brown sugar

60 grammes (3 oz) of low fat cream cheese

10 grammes (2 teaspoons) of plain flour

A large egg

A dash of almond extract

Serves 2

Preparation:

Cooking time: 4 hours

Grease your crock pot or slow cooker.

Crumble the amaretti biscuits.

Melt the butter on very low heat (or at room temperature) and mix it with the crumbled amaretti and half a tablespoon of sugar to make the cheesecake crust.

Coat the bottom of the crock pot or slow cooker with the crust mix.

Put the remaining sugar, the low fat cream cheese and the flour in a food processor and blend.

Add the egg and whisk it in.

Add the filling to the crust and cook on low heat for 4 hours.

Before serving, add the raspberries on top of the cheesecake.

40. Slow cooked brownie

You read the title correctly! You can even slow cook a brownie cake, and it will be even more delicious than one you cook in the traditional way!

Ingredients:

40 grammes (2 tablespoon) of unsweetened cocoa powder

40 grammes (2 tablespoons) of sugar

30 grammes (1 oz) of plain flour

A large egg plus the white of another large egg

30 grammes (1 oz) of dark chocolate

A dash of vanilla extract

20 ml (a tablespoon) of canola oil

A tablespoon of chopped walnuts

Preparation:

Cooking time: 2 hours 30 minutes

Toast the walnuts in a pan for 3 to 5 minutes.

Break one egg and keep it whole.

Break another egg and only use the white.

Mix the egg, the white of the other egg, the canola oil and the vanilla extract whisking them together in a bowl.

Add the cocoa powder, the sugar and the flour, the walnuts and mix them in gently but thoroughly.

Melt the chocolate in a small saucepan and stir it into the dough.

Grease your crock pot or slow cooker and pour in the dough.

Put the lid on and cook on low heat for 2 hours and 30 minutes.

This pudding is very rich in flavours; while preserving the nutritious properties of plums, it adds a ‘naughty’ taste to it with a bit of brandy.

Ingredients:

100 grammes (3 oz) of pitted plums

20 ml (a tablespoon) of brandy

20 grammes (a tablespoon) of sugar

A large egg

60 ml (2 oz) of skimmed milk

50 grammes (a bit less than 2 oz) of bread

A dash of vanilla extract

A tiny pinch of salt

Preparation:

Cooking time: 4 hours

Put the plums in a bowl.

Add the brandy and let the plums soak for about half an hour.

Cut the bread into cubes (1 inch or 2.5 cm in size)

Beat the eggs and mix in the brandy, the milk, the sugar and a dash of vanilla extract.

Put the bread in a bowl and cover it with the egg and brandy mixture.

Cover the bowl (with cling film or tinfoil) and put it in the fridge for 20 minutes to allow the bread to soak in the mixture.

Grease your crock pot or slow cooker and add both the soaked bread and the plums.

Put the lid on and cook on low heat for 4 hours.

Of course we could not miss out on a traditional cake; here is a wonderful, delicious slow cooked apple cake for you.

Ingredients:

60 grammes (2 oz) of plain flour

2 apples

1 medium egg

40 grammes (2 tablespoons) of brown sugar

5 grammes (a teaspoon) of baking soda

5 grammes (a teaspoon) of ground cinnamon

2.5 grammes (half a teaspoon) of baking powder

A nutmeg

20 ml (a tablespoon) of milk

20 grammes (a tablespoon) of butter

A dash of vanilla extract

Preparation:

Cooking time: 1 hour and 30 minutes

Peel, core and cut the apples into small cubes (1 cm or ½ inch in size).

Add the baking powder and the baking soda to the plain flour in a bowl.

Add the egg and whisk till you obtain a velvety dough.

Add the sugar and mix it in.

Add the milk and mix it in.

Add a dash of vanilla extract and stir gently.

Grate the nutmeg on the dough and mix it in.

Grease your crock pot or slow cooker.

Put half the dough on the bottom of the crock pot or slow cooker.

Add the apples.

Cover the apples with the remaining dough.

Ingredients:

2 pears

200 ml (7 oz) of vermouth

20 grammes (a tablespoon) of brown sugar

A vanilla pod

An orange

A cinnamon stick

5 grammes (a teaspoon) of ground cinnamon

60 grammes (2 oz) of yogurt, crème fraiche or ice cream.

Serves 2

Preparation:

Cooking time: 3 hours

Wash and cut the pears in two.

Remove the cores of the pears.

Place the pears in your crock pot or slow cooker.

Add the vermouth and squeeze in the juice of the orange.

Add the sugar, the vanilla pod and the cinnamon stick.

Sprinkle the ground cinnamon.

Put the lid on and cook for 3 hours on low heat.

Remove the pears from the juice and place them on plates.

Serve with ice cream, crème fraiche or yogurt.

This is a wonderfully fruity and nutty dessert that is easy to prepare and which is sure to bring a smile on whoever tastes it.

Ingredients:

2 large Granny Smith apples

20 grammes (a tablespoon) of chopped walnuts

20 grammes (a tablespoon) of currants

20 grammes (a tablespoon) of brown sugar

6 mint leaves

An orange

60 ml (2 oz) of apple cider

5 grammes (a teaspoon) of ground cinnamon

Preparation:

Cooking time: 3 hours and 30 minutes

Wash the apples

Cut the top of the apples and remove the core of the apples, forming a hole inside the apples; make sure that you do not pierce the apples through and that they form cups which you can stuff.

In a small frying pan, toast the walnuts on medium heat for about 2 minutes.

Suff the apples with the currants and the walnuts and half the ground cinnamon.

Put the apple cider in your crock pot or slow cooker.

Add the sugar and the remaining cinnamon and stir.

Squeeze in the juice from the orange.

Add the mint leaves.

Place the apples with the opening upwards into the cider.

Put the lid on and cook for 3 hours and 30 minutes on low heat.

Remove the apples from the juice and place them on plates.

You can serve them as they are or with a dollop of ice cream or crème fraiche.

45. Cinnamon and apple pudding

This pudding is easy to prepare and it has such a low calorie content that it is excellent if you still want to pleasure your palate and satisfy your sweet tooth, but you don’t want to risk putting on weight as a consequence.

Ingredients:

60 grammes (2 oz) of white corn flour

A large apple

60 ml (2 oz) of skimmed milk

30 grammes (1 oz) of black currants

30 grammes (1 oz) of raisins

10 grammes (2 teaspoons) of sesame seeds

20 grammes (a tablespoon) of brown sugar

A nutmeg

A vanilla pod

5 grammes (a teaspoon) of ground cinnamon

Serves 2

Preparation:

Cooking time: 3 hours

Wash the apple.

Core the apple and cut it into small cubes (1/2 cm or 1/5 inch in size).

Put the skimmed milk into your crock pot or slow cooker.

Add the apple cubes.

Add the brown sugar.

Add the raisins.

Add the black currants.

Grate the nutmeg on top.

Stir gently and add the vanilla pod.

Put the lid on and cook on low heat for 3 hours.

5 minutes before serving, toast the sesame seeds in a small pan on medium low heat for one minute and remove the vanilla pod from the pudding.

Serve the pudding in bowls and sprinkle the sesame seeds on top.
