Futura Quinoa and Veggies Soup
(ready in about 6 h 45 min | Servings 4)
Ingredients:
· 2 cups of cauliflowers florets
· 1 cup of sweet potatoes, diced
· 3 cups of water
· 3 cups of veggies broth
· ½ yellow onion, finely chopped
· ½ cup of quinoa
· ½ cup of mixed mushrooms
· ¼ teaspoon of dry marjoram
· 1 teaspoon of dry oregano
· 2 cups of kale, finely chopped
· 3 cloves of garlic, finely chopped
· 2 tablespoons of oil
· Salt
Directions:
1. Heat the oil in a crockpot and sauté in it the onion with garlic for 4 min then stir in the rest of the ingredients except for the kale and cook it for 6 h on low.
2. Once the time is up, stir in the kale and cook the soup on low for 30 min then serve it warm and enjoy.
