Mondo Italian Zucchini and Beef Loaf

Ingredients:
· ½ cup of parsley, finely chopped
· 2 pounds of lean beef, minced
· 1 cup of zucchini, shredded
· ½ cup of parmesan cheese, grated
· 2 tablespoons of onion, minced
· 2 eggs
· 4 cloves of garlic, crushed
· 3 tablespoons of balsamic vinegar
· 1 tablespoon of dry oregano
· ¼ cup of ketchup
· ¼ cup of mozzarella cheese, shredded
· Black pepper
· Salt
Directions:
1. Combine all of the ingredients except for the mozzarella and ketchup in a large bowl and mix them well then shape them into a loaf.
2. Cover the bottom of a crockpot with a foil then spray it with a cooking spray.
3. Place the meatloaf in the crockpot and cover it with ketchup and mozzarella cheese
4. Cover the pot and cook it for 6 h on low then serve it warm and enjoy.
